I am trying to not use the oven at my house so I came up with this Quick & Easy Cashew Chicken Recipe. I think you’ll love it!
8-10 Chicken Breast Tenderlions
2 tsp. of chopped Garlic
1 small onion
1 1/2 Cups of Cashews (if salted, rinse)
1 Bottle of Kikkomon Stir Fry Sauce
Cut up your chicken into bite size pieces.
Heat enough olive oil to cover the bottom of a medium sized saute pan on Medium High .
Place chicken in the heated, sprinkle lightly with soy sauce. Cook on Medium heat until almost done.
When chicken is almost done, add chopped onion and garlic and cook until veggies soften.
Next add Cashews and saute for about 2 mins.
When the chicken is done and beginning to brown turn the heat to medium low and cover the chicken with the Stir Fry Sauce. Let simmer until warm. Serve with rice for Cashew Chicken entree or rinse lettuce, fill with the Cashew Chicken Mixture and serve it as Lettuce Wraps. Either way, it is quick and delicious!
