Today I needed a quick lunch! We have a lot going on and I really did not want to heat up the house, so this is what I went with! I served Fried Pork Chops, Macaroni & Cheese and Mixed Greens with a Texas Caviar Mix on top. It was super easy, took about 30 mins and was truly delicious! I do not like to fry food very much because it can make a big mess, but every true Southerner must have Fried Pork Chops at least a few times a year. That is on the List of Unspoken Southern Rules!
Here are the recipes! Enjoy!
Southern Fried Pork Chops
8 Breakfast Chops (the thin sliced ones)
2 cups of flour seasoned with Tony Cachere’s Cajun Seasoning
2 cups of Whole Buttermilk
Soak the pork chops in the buttermilk for a few minutes. Place the flour into a shallow dish and season it to taste with Tony’s Cachere Seasoning.
Cover the bottom of a frying pan with vegetable oil and let it begin to heat on Medium High.
As the oil begins to heat up, take the pork chops one by one out of the buttermilk and dredge them in the flour mixture. Make sure the entire chop is covered. Then place them in the heated oil. Adjust the heated oil to Medium. Let one side get brown before you turn the chops or you will lose the batter in the oil. Flip when brown and cook until the other side is browned. Keep flipping every few minutes after the chops are browned until when you press down on the chop none of the white batter oozes out. Watch carefully, they will burn easy at this point if you don’t attend to them.
I served with Boxed Mac & Cheese. Cook as directed on the box. Save about 2 Tbsp. of the pasta water, add the cheese package, 1/2 stick of butter, pasta water, 1/4 cup of milk and 1/2 cup of sharp cheddar. Salt & Pepper to taste.
Texas Caviar on Mixed Greens
1 can of White Shoe Peg Corn (Drained)
2 cans of Black Beans (Drained & Rinsed)
1 carton Sliced Plum Tomatoes (Or Whatever you have available)
1 package of Italian Dressing Seasoning Mixed as directed.
1 package of Spring Mix
In a medium sized bowl, combine the Corn, Black Beans and Tomatoes (Add some chopped Avocados & Green Onions if you have some on hand).
In a pint jar mix the Italian Seasoning Mix according to directions and shake well. (I use Olive Oil & Balsamic Vinegar) Add the Italian Dressing Mixture to the Vegetable Mixture and there you have it… Texas Caviar!
Place the Spring Mix in a bowl and top it with the Texas Caviar for a refreshing, healthy salad! It will help you overcome the guilt of the Fried Pork Chops and Macaroni & Cheese!
This is a meal both kids and adults will love!
