B.Kay’s “Ridiculous Chicken Enchiladas”

Don’t spend your money on all those new, fancy Cream Cheese “Special Sauces” at the grocery store!

You are getting charged more than double for a block of Cream Cheese with some seasonings. I did it once and found out what was in the Fiesta flavor for enchiladas or a Mexican Pasta Dish. So, here it is, I hope you enjoy! I want to give you great cooking tips that make you look amazing in front of your family and friends! Anyone can be a good cook if they want to be! It’s not hard at all!

SONY DSCB.Kay’s “Ridiculous Chicken Enchiladas!”

1 8 oz Cream Cheese

1 Can of Cream of Chicken Soup


1 package of Taco Seasoning (I add a little more)

SONY DSC1 cup of Chicken Broth

1 – 3 cup package of Colby Jack Shredded Cheese

Flour Tortillas

1 Rotisserie Chicken deboned and diced

1 large can of Red Enchilada Sauce

On medium heat in a large sauce pan (sprayed with cooking spray) slowly melt together the cream cheese, Cream of Chicken Soup, Salsa and chicken broth together until the mixture is smooth. Then add 1 cup of the Colby Jack and taco seasoning  along with the chicken.  Spray a large casserole dish with cooking spray, cover the bottom with about 1/3 of the Enchilada Sauce. Take one Flour tortilla and add the chicken mixture, top with a sprinkle of the Colby Jack Cheese SONY DSCand roll. Place the filled tortilla folded side down in the enchilada sauce. Repeat until the pan is full. Then add 1/3 of the Enchilada Sauce over the top of the filled tortillas and sprinkle with the excess cheese.  Repeat the process and fill an 8″ X 8″ casserole dish. You should have enough to fill an 13″ Casserole dish and an 8 ” casserole dish. Bake at 350 degrees for 30 minutes. Top with Sour Cream, Black Olives, Extra Cheese, Salsa or whatever you want!

You can freeze the smaller pan for a quick fix dinner later or share it with a friend.  Serve with Spanish Rice, Black Beans & a Salad! (I used Aldi’s brand of Spanish Rice & Black beans…cheap and just as good!)

  1. Yum!!! Cannot WAIT to try this. Question: does the cream cheese need to be at room temperature, or can it just go straight from the fridge to the pan? Thanks!

      I put it straight from the fridge into the pan, however,I sprayed the pan with cooking spray, cooked on medium heat and added the liquids as soon as the cream cheese started to soften.
